LAST-MINUTE PLUM PUDDING.
——tsi Some housewives who determine lo go without the Christmas plum pudding feel quite annoyed withthemselves for their spartan resolve when Christmas aetually arrives. They want the time-honoured pudding, and mean to have one. '1 he following recipe is one which meets such a ease:—lngredients: Four ounces of flour, 4 oz, soaked bread, -1 oz. sultanas, 2 oz. mixed peel, 41b. .apples, 2 oz. grated carrot, grated rind and juice of half a lemon, 0 oz. suet, quarter teaspoonful salt, one dessertspoonful of mixed spice, one egg (dried), half gill milk, 2 oz. treacle. Method of making: Soak the bread in cold water, . when soft squeeze it dry in a cloth, put into a basin and break up with a fork. Add the flour, baking powder, and A spice, ,£nd half teaspoopful of salt.
Wash, scrape, and grate (lie carrot, grate the lemon rind, peel and. core tiie apples and chip finely, clean the sultanas, shred the candied peel, and add all to the flour mixture, heat up the prepared egg, mix the milk and syrup together, and stir all into the pudding, adding the lemon juice last. Put all into a greased basin and cover with greased paper and steam seven hours. If.' put into two basins, 31 hours’ steaming will suffice.
