COOKING A HAM.
A ham of 201 b. will require boiling for five hours. Boil slowly and skim frequently. A ham 121 b. weight will take five hours to bake. Make a paste of 21b., of flour, coat the ham thickly, and place it in a fairly large baking dish with a large cup of Mater. Bake slowly for six hours. Sometimes more is needed according to age of ham. When the ham is cooked, remove the skin and sprinkle with browned bread crumbs, and place around the knuckle a piece of paper cut into a frill. When boiling ham, add a small leacupful of vinegar and a feu 7 cloves to the wafer. This will greatly improve the flavour If the ham is allowed to cool in the water in which it was boiled, it will be deliciously moist and sweet.
Another wmy to cook a ham is to ‘‘plunge” it into a copper full of boiling \vater, and boil it hard for half an hour, after which draw 7 all the fire from under it and keep well covered until quite cold. It will then he found to ho delicious in Jhivour and perfectly cooked.
