COOKING A HAM.

A ham of 201 b. will require boiling for five hours. Boil slowly and skim frequently. A ham 121 b. weight will take five hours to bake. Make a paste of 21b., of flour, coat the ham thickly, and place it in a fairly large baking dish with a large cup of Mater. Bake slowly for six hours. Sometimes more is needed according to age of ham. When the ham is cooked, remove the skin and sprinkle with browned bread crumbs, and place around the knuckle a piece of paper cut into a frill.
