The Government Poultry Expert has received a letter from Dunedin, covering soma interesting particulars showing the extent of the demand for eggs in Australia and also, incidentally, the export of eggs irom China and Japan to Australia. The letter from Sydney nays : “ A

brisk trade is being done at present between here and South Australia in •ggc. Owing to the high prices of meat and vegetables here, the demand has been enormous/ To give you an idea, I may state that last season there were between 500,000 and 600,000 dozen eggs stored in the Government Cool stores here, but this year, owing to the high prices obtainable, only about 40,000 have been stored. Our bakers and biscuit manufacturers have to look elsewhere for their supplies, and lo the iatter industry we usually look to dispose of our surplus stocks under ordinary circumstances. Before the new tariff came into operation (i.o, last year), we imported from China and Japan 678,*31 dozen eggs, valued at £23,560, and from other Australian States 612,698 dozen, valued at £21,687. Of this quantity South Australia supplied us with 587,933 dozen, valued at £*0,776. This year to date we have Imported from South Australia alone eggs to the value of £z^if9^ South Australian statistics show that eleven years ago there were 1,087,702 bead of poultry in the State, and the export trade was worth £48,554. In 1901 there were 1,348,462 head of poultry and the value of the export trade was £73,689. The total value of the export trade for ten years was £435»534i or £84,915 more than the total value of the butter exported in the same period.
