How to Make Oyster Croquettes.
Pn4n mud plump and ruffle 90 oysters. tUrn them oat and chop fine. To a gill •f liquor that exuded from the oysters •dd an equal amount of cream, and when II boil* thicken with 2 tablespoonf uls of floor rubbed into a heaping one of butter ■nd stir constantly until it is smooth. Add the well beaten yolks of 3 eggs; let boil tip once and remove from the fire. Add a teaspoonful of celery salt, a table•poonfulof chopped parsley, a bit of cayenne and a palatable seasoning of white pepper and salt and return the oysters. When cold, form into oval or round croquettes, dip in beaten egg, then into bread crumbs and fry in smoking hot fat composed of one part butter to two Oflard.
