The Dairy Industry.

Mr J. Sawers, Government dairy instructor, delivered an address at Opunake upon the subjects of the dairy factory system and co-opera-tion. Mr Sawers confidently states that by the dairy factory system alone can the best result to dairy farmers be obtained, and that on the co-operative system. One reason was that, say there were 60 dairy farmers who each made cheese ; That means 60 persons employed each day equal to 60 days. If sent to a factory, 4 men would do the work in 4 days, a saving of 56 days and the article would be better and more uniform in quality. Two extracts from reports of factories in Otago were read ; the worst factory paid 3d per gallon, and the best 3Jd per gallon for milk besides a surplus of over £6()00 and several tons of cheese on hand ; a 6 per cent dividend was paid to shareholders. The first factory he managed in the colony when he arrived had an overdraft of £1000 or £1100. The first year 4d a gallon was paid, a profit was made besides, and he received £500 a year. He rented a factory at £128 a year with an understanding to pay not more than 3£d per gallon, A supply of 1000 gallons per day should be made and cased at a cost of id per lb of cheese one gollan to one pound of cheese. Cheese-makers could be got at form £2 5s to £3 10 per week. His opinion as to the best breed for this colony as milkers was a cross between the Shorthorn milking strain and the Jersey.
