THE FREEZING PROCESS.
■o At the works of the New South Wales Fresh Fond and Ice Company during die past lew years, the Sydney Mail reports, some very interesting experiments, having for their object the satisfactory settlement of theories respecting the preservation of food by freezing, have been most carefully carried out. In August 1870, half-a-dozen sheep from Mr Carlo Marina* station, Moppity, Young, were killed, and in their fieece were despatched by rail to the- works. Without further preparation they were placed in the freezing room, and there kept until the 13th Do comber, ISBO, vJien one was thawed. Its wool was removed, and found as excellent in texture as that taken from living animals ; several portions of the sheep were distributed and eaton, and the verdict v;as unanimously to the effect that they were in every way as palatable as* is the best market produce of the day.
