OATCAKES >, You need: One cup wholemeal Hour; \ cup plain white flour; 3 . cups fine oatmeal”; 2oz margarine or good dripping; salt to taste; 1 cup hot water and enough cold water to mix into a very firm dough. Sift plain Hour and salt together, then add oatmeal and wheatmeal. Make a bay in the middle of the flour and pour in the hot water, in which the margarine is melted. Form into a very stiff dough, adding cold water, a little at a time. Divide the dough into three or four pieces and roll each out to about 1-8 inch thick. Cut into fingers or squares and bake in a moderate oven for about 10 minutes. Store in airtight tins.
