KIDNEY HOT-POT
11b ox kidney, lib potatoes. 3 small onions, 2 sticks celery Salt and pepper. Cup of stock or dissolved meat essence. Prepare the kidney and cut in small pieces, slice onions and potatoes and chop celery. Put alternative layers of vegetables and kidney in casserole, barely cover all with stock, and place thick layer of potato on top. Cook for an hour in moderate oven with lid on, and then half an hour with lid off.
