An Old Favourite Apple Pudding

And how about an apple pudding only a little different this time. You will need: — lib of apples or other fruit. 2*ozs sugar. flozs flour. level teaspoon baking powder. I level teaspoon mixed spice. Pinch of Salt. 4oz butter. II teacups milk and water. } teaspoon lemon essence and an extra -loz of sugar for your batter. Sift flour, salt and spice, rub. in butter then mix in half an ounce of sugar. Beat in half the liquid gradually. Beat thoroughly until small bubbles appear, then mix in the rest of the mixture (not your sugar). Peel and core the apples, cut in small slices and mix with 2oz sugar. Put in a greased pie-dish or fire-proof dish and pour batter over them. Bake in a moderate oven for about $ of an hour until golden brown on top. Sprinkle with remaining sugar and serve hot.
