A “Mock” Cream.

Dried milk is used in this recipe for “Mock” Cream. You will find it most successful. Ingredients: 1 oZ. of castor sugar. 2 ozs. of margarine. 8 level dessertspoonsful of dried milk. 4 dessertspoonsful of water. |-teaspoonful vanilla essence. Beat the sugar and fat to a soft cream, then gradually stir in the dried milk, adding the water by degrees to moisten. Beat these ingredients all together to a smooth consistency and flavour them with vanilla. The water must be added very gradually or the mixture is liable to curdle. A little more water may be added if a softer consistency is required. If the cream is left to stand for any length of time the mixture should be beaten up again, and if it is too stiifc more water should be added.
