APPLE FRITTERS.
Required : Four large cooking apples, castor sugar, half a teaspoonful ground cinnamon, frying batter. To Make the I.after : Put two ounces of flour into a basin, add a tiny pinch of salt, the yolk of an egg, and a teaspoonful of cream. "Mix well, and add two tablespoonl'uls of lukewarm water. Let stnnd »"or half an hour, whisk the white of an egg to a stiiY froth, and mix gently. Feel and cut ap.pk'.s into slices a quarter of an inch thick ; cut into cores. Dip the slices into the batter, am! fry in boiling fat until a golden brown ; drain. Mix a little cinnamon and castor sugar together ; dust this over the fritters, and serve as hot as possible.
