Fake Food Smoking.
We have before now exposed the fact that smoked foods, as bacon, kippered herrings and such like fare are often only entitled to be termed "smoked" by courtesy. They are painted fakes, and not the genuine thing. And the paint ' employed to simulate the natural smoking is not always above suspicion. . The chief objection, however, is that smoke penetrates every pore of the food and preserves it, while painting does not, with the result that ptomaine poisoning may result to the consumer. We believe no prosecutions have taken place in this country, but one is just reported from the United States, and we are indebted to the U.S. department of Agriculture for a report of same. It took place over the seizure of some bottles labelled "Krauser's Liquid Extract of Smoke." described as "for smoking and preserving meat." The stulT proved to be merely crude pyroligneous acid. This is prepared by the dry distillation of . wood. It is not a thing of evil, but it is not "smoke."
