KEEPING CHEESE FRESH. To prevent cheese from getting hard, cut a small piece off for present use and place the remainder in a cool safe. Spread a tjiin film of butter over the cut part and cover with a clean cloth. This will prevent that hard, cracked condition which ruins the best of cheese. FLOOR STAINS. When hot fat hs spilled on a floor the first impulse is to pour on hot water. Do not do this, as i!t keeps the fat melted and allows it to sink into the wood. Pour cold water, a lot of it, and the fat will harden before it sinks in. Then it can be removed by scraping it up. RELIEF FROMtBURNS. Baking soda gives instant relief to a burn or a scald. Applied either wet or dry to the burned part immediately,the sense of relief is magical. It seems to withdraw the heat, and with it the pain. _^ SAVING WOODWORK. To save paint and furniture from being knocked and scratched* when sweeping, nail 'pads of velvet or cloth on all brooms and brushes, especially those used for stairs. STORING SILVER. I If silver is to be stored away ror some time, pack it with dry flour ; it will remain untarnished. INDIAN PUFF. Cold meat, curry powder, milk, pastry, egg, sauce. 'for this recipe any remains of cold meat may be used. Mince the meat, flavour it strongly with curry powder, and moisten with white sauce or tomato sauce if you have it, or if not, jan egg and a little milk. Roll some pastry as thin as possible, ; cut it in squares. Lay a spoonful |of the meat on each, fold the pas- | try cornerwise, wet it to make it ] stick, brush over with milk, and bake for a quarter of an hour or 20 minutes in a quick oven, and serve on a folded napkin, garnished with sprigs of parsley. CHILLI F, WINE.31b. white sugar, (? cups boiling wa.ter, citric acid, 20 or 24 dried chillies, 1 tablespoon burnt sugar. Pour water on sugar, add chiUies (well crushed), boil for ten minutes, then add loz. citric acid. When cold add essence of lemon to taste, then bottle.
