PARSNIPS IN WINTER.

The parsnip is a vegetable especially adapted for winter use. It is not considered high-class, but it is extremely acceptable as a family dish. All kinds of green vegetables may shrink and perish with ssvere weather, but the parsnip is always safe and unfailing. Some dig it out in the autumn, and store. This is not the best way to treat it. When stored it is apt to shrink, and it loses nap and flavour, or, indeed, nutrition, which is against it. The better way is to let it remain in the soil where it grew, and dig fresh whenever wanted. It is then perfect in flavour and substance and quite a different subject to the stored root. It remains fresh in the ground nearly all through the winter and it is available every day. It is truly a utility vegetable.
