PRESERVING DUCK EGGS.
Reference was made in a paragraph in the Auckland "Star" on Saturday to the fact that in regulating the egg market a serious difficulty had to be overcome through duck eggs, which form a large percentage of the supply, becoming a glut on the market because bakers refuse to use them, and because it has been found impossible to preserve them. It was fnrther stated that one man had been trying for twenty years to preserve d_.ck eggs, but his efforts had been futile. Some good news to those people who have failed with preservatives now comes to lightMrs W. Service, of l'onsonby, has been preserving duck eggs for years quite successfully, and using them for the table, as well as making cakes aisd in cooking generally. An egg taken out from a large jar on Monday bearing the date of .January 10, 11)10, since which time it and many others had been in a locally-made preservative, was broken in the presence of a pressman and despite its age of eighteen months was quite good. Some cake that Mrs Service made from eggs out of the same jar was also produced and it was excellent in every respect.
