USEFUL RECIPES.

Baked Fish and Caper Sauce.—For this have a nice fresh haddock or plaice filleted. Tie each fillet in a knot and place in a deep greased baking-pan. Put a piece of greased paper over, and twist it round the edges so as to form a complete cover, bake for about twenty minutes. For the sauce melt one ounce of butter in a pan, stir in one ounce of flour, and, when quite smooth, half a pint of water. Stir till it boils and leaves the sides of the pan, then add one tablespoonful of chopped capers. Arrange the fish on a dish and pour the sauce over.

Pressed Beef. —Required: One pound of rump steak, half a. pound of rolled bacon, a quarter of a pound of breadcrumbs, and two eggs. Season with a dash of allspice, black pepper and salt. Mince the meat, add the breadcrumbs, mix all together, seasoning rather highly, then drop in the beaten egg, stir aitogethpr thoroughly. Place the mixture in a three-pound jam jar, press it down, then steam slowly for three hours; do not let the water once get off the boil. Turn the mixture out of the jar, roll it, and press between two boards. When cold and set cut into very thin slices and serve.

Cold Meats With Jelly.—Required : A quarter of a pound of sliced ham, a quarter of a pound of sliced pressed beef or tongue, very thin slices of cold beef or veal, three gherkins, two spoonsful of aspic jelly, and salad. Select a long, narrow dish for this, and on one side of it arrange the slices of ham, each over-lapping the last. Touching this, have the veal in a neat line, then the tongue, and at the end of the dish have a pile of dressed salad. Cut the gherkins into thin slices and use them for garnishing the meat. Chop the jelly very finely (on a piece of white paper), and arrange it in little heaps round the flat edges of the dish.

Orange Rock Cakes. —Mix one teaspoonful of baking powder with half a pound of dried flour. Rub into it three ounces of butter, then add three ounces of caster sugar and the grated rind of an orange. Make into a stiff dough with one egg beaten with a little milk. Place in rough heap on a greased tin and bake in a quick oven for fifteen minutes. Some rind the addition of a little chopped orange peel an improvement.
