Virginia Beef.—lngredients: Half a pound of raw lean beef, two ounces of fat bacon, one tables poonful of floor, half a teacupful of milk, sprigs of watercress, toast. Topside of beef is best for this dish. Mince it finely and rot the bacon into small cubes. Fry it quickly until it is well coloured then shake in the flour and brown that lightly also. Pour in the milk and stir until the mixture thickens. Sea <on it carefully and let it simmer ery slowly for ten minutes. Put squares of hot toast on a dish, turn the mixture on to them, and garnish with sprigs of well washed watercress and the cubes of fried bacon.
