Potato Salad.—Boil Z large or 6 medium potatoes in their jackets and when cold cut into small dice. Add 1 tablespoon chopped union, 1 medium eating apple (diced small), 1 dessertspoon or more of large red chilii (finely shredded). Mix juice of half a lemon with 1 level teaspoon sugar, i level teaspoon salt and 3 tablespoons cream. Combine all ingredients and stand aside i hour to blend. Arrange salad on lettuce-leaves and serve with cold corned meat. Potatoes may be added hot just before serving salad, with surprisingly delightful results.
