HAVE YOU EVER TRIED THIS? When using a cheaper cut of corned meat, boil it with an onion, vinegar and bunch of herbs till it is almost ready to fall to pieces. Lift into a basin, cover with a saucer and put a heavy weight on top. Turned out when cold it will slice beautifully- j Cheese and Potato Pie.—Two pounds of freshly-boiled potatoes, J cup milk, Hb. cheese, 1 thick slice of bread, loz. bacon fat, salt, pepper. Mash potatoes with a fork, stir in the milk and half the fat, add salt and pepper. Crumble bread, chop (or grate) cheese, and mix them together. Put layers of potatoes, bread and cheese into greased pie-dish. Dab bacon fat on top and bake 20 minutes. Serve hot.
