By ANTOINETTE for the “Hauraki Plains Gazette.” A USEFUL GIFT. Somewhere to keep the many dress accessories of to-day :— A Fan Sachet. Material required : 3yd taffeta, iyd merveen, 1 gold tassel, 13yds gold braid, 3yd gold lace, Iyd rosebud trimming, Jyd stiff muslin, reel of silk to match the silk used. From the stiff muslin cut two pieces, each fan shape, the sides 9 inches and the centre 93 inches deep by 123 inches across the widest part. From the merveen cut four pieces the same size. Place a piece of merveen each side of the muslin and tack round the three edges. Cut a piece of taffeta to fit one covered muslin fan and tack it round the sides ; the mouth or curved side is neated with a strip of taffeta. This completes the lower half of the sachet. Take the other piece of mer-veen-covered muslin and across the pointed end tack a piece of straight taffeta 5 inches deep. A strip of taffeta 23 inches long by 61 inches in the centre and 5 inches wide at each side is turned in, gathered along lach 23inch side, and then sewn to cover the top of the fan. The two pieces are sewn together, leaving the mouth open. The lace is gathered and sewn round the mouth of the fan. The gold braid is sewn as three sticks of the fan, then up each side and across the top, with a row to hide where the gathered and straight taffeta meet. Sew the gold tassel to the point, and the rosebud trimming inside the mouth of the sachet. A Book Sachet. Material required: A flat china bust, lyd of taffeta, Jyd merveen to match taffeta, 3yd stiff muslin, 21yds rosebud trimming, 13yds gold lace, 24yds of 1-inch ribbon, Iyd 1-inch elastic, and sewing silk to match. From the double muslin cut an oblong 17 inches long by 8 inches wide. Cover this on both sides with merveen. Cut the taffeta in half, making two pieces each 173 inches long by 9 inches wide and with one length of taffeta line the sachet. Cut the white elastic into four pieces, and the ribbon into eight pieces. Gather a length of ribbon each aide of the elastic, so that the elastic is completely hidden. Do not stitch the elastic in any way, or it will not stretch. Sew two covered elastic bands on each side of the book 11 inches down from the top and 23 inches from the base. Divide (by sewing) each elastic band into three. A rosebud cut from the trimming will neaten each end of the elastic bands. A row of rosebud trimming is then sewn right around the inside edge of the satchet. Place the other piece of taffeta upon the outside of the sachet and sew. Fold over like a book and sew the china bust in the centre of the cover. From the gold metal lace cut 7 inches. This is gathered into a bertha and sewn round the base of the bust, with two roses sewn to each shoulder. The remainder of the lace is sewn round the cover, with a row of rose trimming to neaten where the lace is sewn to the silk.
SOME GENERAL RECIPES. Simple things that everybody knows and likes :— Pumpkin Pie. One cup mashed pumpkin, i cup flour, 1 small cup sugar, 2 cups milk, 1 egg, lemon rind, salt, cinnamon, short crust, ginger. The cup of pumpkin should be heated and the cup of sugar not quite full. Mix these, add the flour gradually, then the two cups of milk (scalding hot), stirring till well blended ; then add ginger, salt, and grated lemon rind to taste. Line a deep pie dish with short crust, then beat an egg through the pumpkin mixture, fill the pie-dish, sprinkle cinnamon on top, and bake in a moderate oven till the centre of the pie quivers like jelly. Special Lemon Tart. Two lemons, S cup sugar, i cup butter, 3 eggs. Cream the sugar with the butter, then add ,the beaten egg yolks, the grated rind of the two lemons and the strained juice of one of them. Whip the whites of the eggs until stiff, then fold them into the mixture. Line a tart dish with flakey pastry, pour the mixture into it, and bake in a very moberate oven until set. Apples on Sticks. One pound sugar, 2 teaspoons water, 1 teaspoon butter, apples. Wash the apples, and dry them thoroughly; then stick each one on a smooth chip of wood. Make the toffee by boiling together sugar, butter, and waiter for 20 minutes. Before the toffee has time to cool and harden dip each apple into it, coating the fruit well with it; then allow to harden. Scotch Shortbread. Jib moist sugar, 2oz blanched almonds, 21b flour, 11b butter, 2oz citron peel, a pinch of salt. Chop the citron and almonds small, sift the salt with the flour. Break the butter into the flour, then add the sugar, working it up till you have a heavy, smooth mixture. Flour the board, put the dough on this, divide it into four pieces, and roll each into a cake. Strew some almbnds and peel over the top and press these in with the rolling-pin. Pinch round the edges of them, put into well-buttered tins and bake for 20 minutes. To Clean Smoke-marked Walls. Paint over the walls and ceilings with some fairly thick cold water starch, and when-it is quite dry rub it off with a soft, clean duster.
