CANADA’S LOST TRADE. STEPS TO REGAIN POSITION. A National Dairy Conference was recently held at Ottawa to discuss the situation in which the dairy industry of Canada now finds itself. It was frankly recognised that Canada is losing ground on the markets of the world. T,he Dairy Commissioner, Mr J. A. Ruddick, stated that, in .1903, the Northern Hemisphere, including Canada, the United States, and Denmark, supplied 93 per cent, of the butter and 98 per cent, of the cheese imported into Great Britain. At that time countries in the Southern Hemisphere—New Zealand, Australia, South Africa, and Argentine—supplied only seven per cent, of the butter and two per cent, of the cheese. In 1923 the northern countries have supplied only 56 per cent, of the butter and 41 per cent, of the cheese, while the Southern Hemisphere supplied 44 per cent, of the butter and 59 pci cent, of the cheese. After three days of consideration the following decisions were reached and suggestions made: That the grading of cream should be made compulsory in all the provinces of Canada. That shippers of butter should not be allowed to place butter on board ship at a higher temperature than 25 degrees Fahrenheit. It. was shown that small cheese factories arc a detriment to the dairy industry. It was advised, therefore, that the Dominion Dairy Division should investigate and make known the excessive cost of operating small factories and the small profits they realise as compared with larger factories. It was not thought wise to attempt to regulate the size of factories by legislation. Thai federal grade certificates should not be issued for butter that does not score "first” or better, arid that no butter be approved for export that is not made from pasteurised cream.
