It may not be generally known (say the Overseas Daily Mail) that the London County Council conducts a special course for waiters. The boys are “ caught young ” and given a thorough training, which enables them to obtain good positions in both London and Paris. There are also classes for boy cooks not only in London but in other parts of the country as well. A special luncheon prepared by some pf the young chefs-tp-be was recently eaten by some of the best-known caterers in London, who unhesitatingly pronounced it excellent in every respect. In a big town in the North of England the mistress in charge of a boys’ cooking class has just stated that it is her experience that the lads are much quicker than girls at learning the mysteries of the cook’s art.
