The regulations which will be enforced to place the cheese industry on a better footing will aun directly at improving the milk supply to factories. It is recognised that successful cheesemaking depends primarily on the qual. ity of the milk. Milk grading, with differential payment,- will be established and the conscientious manager will be safeguarded by preventing a supplier from leaving one factory for another. It is stated that 20 years ago a .factory manager had no compunction about refusing a supply below g-rade j but in recent years keen competition' has resulted in a changed attitude owing to the possibility of losing the 'supplier. At the present time grading of the milk is carried out-, but no compulsory differential .payment exists. In future the milk will he graded at tire factory and when payment is made on the butter-fat content it is probable that second-grade will receive Id or Ida lb. less. Although experiments have been made, there is as yet no suggestion th.pt payment should be on any other b«|?if| than 'butter-fat. Jt is understood. that two or three factories have been offered to' the Dai’ v Division of the Agriculture Department for experimental purposes and it has been decided definitely to take over a factory. A selection is now being made and a start will be made probably next season
