CUT IN WAGES

Wages cuts are the objective oi the hotel-keepers in their terms for tire' settlement of the hotel employees' dispute, which will shortly reach the conciliation stage. For male kitchen hands or pantry men periods of apprenticeship vary according to age. Youths under 17, it is proposed, should begin at 15s a week, and receive increases • yearly until in the fifth year they wi.l receive 40s. Youths 19 and Over, on the other hand, will graduate from 22s 6d to the 40s mark in two years. Similar conditions are suggested for female employees, but in their ease the commencing salary varies from 10s to 17s 6d, and they are able to rise to 31s 6d. Waiters and waitresses are similarly provided for, the maximum at the end of the term of apprenticeship being 52s and 30s respectively. Head waiters at present receive £2 15s 9|d, and head waitresses £1 12s 4fd. The scale for cooks it is suggested, should also be altered as follows: Where five or more hands are substantially employed in the kitchen: Chief cook males £4 4s 6d, females £3 13s 6d ; second cook, £2 14s 6, £2 6d ; third Cook, £2 2s, £1 12s 6d. Where three or four hands are substantially employed in the. kitchen: Chief cook, males £3 12s, females £3 6s; second cook, £2 4s 6d, £1 18s 6d. Where one or two hands are substantially employed in the kitchen: Males £2 14s Gd, females £2 8s 6d. Head cooks’ wages under the present award range from £5 8s in cases where eight or more hands are employed to £2 15s 9}d in cases where two hands are engaged. Other proposals are as under, the present rates being given in parentheses : _p o rters: Day, £2 (£2 2s 9d): night, £2 2s (£2 4s 6*d). Barmen 17s 6d (£3 0s 3d); barmaids, £2 12s (£9 14 S in?d), eellarmen, £2 17s 6d (£3 0s 3£d).
