“A DISGRACE”
QUALITY OF NEW ZEALAND CHEESE.

While speaking at a gathering organised by the Otago Women’s Club and the Manufacturers’ Association, Lady Ferguson strongly criticised the quality of New Zealand cheese. “Why is it that we cannot get good • cheese?” she asked. “It is really a disgrace that we. cannot get it in a country like this where we have the finest pastures, the best of dairy herds, and the latest scientific appliances that have been brought to bear in industry. Housewives are now being forced into buying loreign cheese wrapped in silver paper. However, I see by the papers that the matter has been taken up, and* 1 suppose something will be done to bring about an improvement. ’ Lady Ferguson added that if the prevailing class of cheese was being exported to the Old World she could quitq understand why it was not popular on the Home market. People who went overseas for trips did not hesitate to boost New Zealand lamb, mutton and butter, but they could not honestly say a, good word for our cheese.
Mr T. Somerville said hes had heard it said that the quality of NAw Zealand cheese received a set back when the Arbitration Court laid down a rule that an eight-hour day must be worked in factories. He had been informed that if the manufacture of cheese was to be carried out properly, ten hours a day should be worked. It was stated that under the existing system cheese was. left more open and more spongy than the product which was worked for a longer period.
