MILK POWDER

CHRISTCHURCH, September 20. Tug use of milk powder as a first class improver in broad-making has been made possible by the work of | Air H. E, West, chemist to tho Wheat I Research Institute, At a meeting of the committee of the institute yesterday morning, a letter was received from Air W, 11. Udy, tho chief chemist of the New Zealand Co-operative Dairy Co., of Hamilton, commenting on a process of manufacture of milk powder advocated by Air West. Tho letter, read : “You will be interested to know, however, that Wo have, been able to work out a method which will enable us to give the extra heat treatment indicated as desirable by your previous work, and samples I have show that the results are better than anything we have previous y had.” Dr. H. G-. Denham, chairman, said that through Air West’s work on samples of dried milk submitted by various North Island companies, a very considerable change bad been made in the technique of manufacture and the product was now comparable as an improver with condensed milk. The fact that there was a local market for the produce , might induce manufacturers to make milk powder in times of low prices abroad, instead of exporting it in the form of butter or cheese.
“This is really one of the most successful pieces of work Air West has done,” said Air Denham.
