The old controversy of white versus brown bread is likely to be revived by a report issued by the Medical Research Council, containing the investigations of Doctors R. A. McCance and R. D. Lawrence, of King’s College Hospital, who say undoubtedly that xvliite flour is a better source of energy for it contains a higher percentage of starch than brown. In the latter, some starch is replaced by addition of membranes of a very indigestible type and proteins ai-e derived extra which don’t rank in nutritional value with animal and other vegetable proteins. The laxative value of wholemeal bread is no greater than any other laxative.
