Fi.sli contains in admittance- protein, a flesh-lorming constituent, which in must households is furnished by tin more expensive meats of various kinds. ADVANTAGE OVER MEAT. The great variety of fish, the peculiar characteristic flavour of each, tilt case with which a good co-ik can render it attractive and delicious to the taste, are ail in its favour and shoult. appeal to every housewife. The flesh of certain fish, such as the eel, turbot and saimon, contains a large quantity -oi fat, while the most concentrate!, and most vital fojd is comprised ii the roes of the cod and many othei fish; which contain faciors vitally essential, especially to the health of Hr growing child. Fish possesses one great advantage iver meat in that it can he so readily preserved in a very tasty form. The New Health Society is now pro paring a statement on ‘Tne food valut >i fish and its place in national diet aiy,” It will contain very valuable in formation on the importance to tin nation of all kinds of fish as article: of diet, and on ihe special quality antadvantage of each variety. If the public demand for fish is increased we shall soon have numbers o shops in which this form of- food wiT he displayed as attractively and gen erally as is now the case with fru/t The price will steadily diminish as tin use of this most important article o! diet becomes more popular and general.
