BUTTER-FAT CONTENTS IN CHEESE

HIGH PRAISE FOR WAIT AH A

FACTORY

lloeemly the Chief Government Dairy Instructor visited the Wiaitalm Dairy Factory and in conversation with the Manager told him that several careful tests had been made frail, the cheese sent from his factory’ to the Government grading stores for butterfat .contents, and after careful tests found that the Waitalm cheese contained the highest hutterfat contents of any cheese in the South Island.

• This report should indeed be very encouraging to all the storekeepers and oublic alike on the AVest Const knowing that they are getting such a high grade article. Within the last lew months several grading men from England, all highly connected with the dairy industry have visited New Zealand and all their complaints have been the same tiling, that New Zealand cheese is lacking in butterfat. Such a report coming on top of all this is very encouraging to the Waitaha Factory and West Coast people in general wit’ 1 know now that on being supplied with Waitaha cheese they are getting the cheese containing the highest amount of butterfat in the South Island. The local sales for this factory have more than doubled themselves this season, and without this information the general public •must have recognised the quality of the article .
