Do not allow the flames to flare up the sides of pots and kettles; this does not heat the contents more quickly, hut wastes heat and causes an unpleasant smell. A low gas flame will keep liquids gently boiling. Boiling water remains at 212 degrees, whether gentle or fast boiling. Always keep the saucepan lid on. Never put on more water to boil than is actually required. Pots and pans should lie as broad and flat as possible to utilise beat to the best advantage.
