Food Values. Bread—the so called “staff of life”— is doscrilied in a recent publication, as a poor food except in conjunction with other foods. “Alone, it has too little and too poor protein.” Butter is a good source of calories, while cheese has few drawbacks, but eggs unless used sparingly are a wasteful way of purchasing food. Many old-fashioned theories, such as the idea that meat promotes energy above all foods, are exploded by the author of the workreferred to.
