Thk idea' of the Central Dairy Factory i>s established in H*kitika appears to bo vorkinK out satisfnctprily. The
supplier is enjoying the result, wo .should say, seeing the advanced price being paid for butter fat. Ihe Mostland Dairy Coy., in the first lour months of its existence has produced something like 80 tons of blitter, besides many other products, such as cream, ice. etc., ami | divided cool storage, all of which have added to the revenue, ’the volume of production is rather pleasing in view of the fact that it was Decenilier before the plant could he operated, and previously many suppliers had made their arrangements for the season. No doubt for the incoming season the ready commencement which can lie made, will result in huger quantities of cream being received with an enhanced output. The cent nil idea is hearing ihe- fruit expected of it. Situated in the town, and adjacent to the railway line, it has :i connection which factories in the country caii never achieve. The new factory established here is <|iiite on modern lines, and i- < ommodious and well equipped in every respect, equal to the task of dealing with a much larger out. pm. There is no doubt the by-pro-ducts. so to speak, will help the financial side of the venture materially, and when the Mg industry is eiitereil upon the venture 'ill meet with lt:rtlier sue ess. and the sett lei s generally have occasion lo appreciate ihe enierprice of the promoters in establishing a factory on centralised lines. The lactoiy will operate as far into the winter months as the supply of cream will permit. No doubt next year, work all the year round will be possible as herds by that time will be regulated to better advantage. Butler-making in winter in ibis locality could be possible only under the centralised system, as all parts of the district are within easy rear'll, by rail or motor, of tlio factory. 'Plio local supplies of cream come irom Mt. Tloreulos in tlic south to the Teremakan Settlement in the north, indicating tlio l ossihlo seo|je of the scheme. The factory for the practical production of Init.ter has been completed for some time, hut there are many little extras to add yet lxl- - the building will become the smart show place it is intended to lie. ’I lie modern factory is a side and span organisation where the commodity treated must lie dealt with under the best hygienic conditions. From the cream can to the cool store there should he no occasion to handle the product intended for human consumption, and that rule is followed closely in the Westland factory. The building uud amt appointments arc well worth inspecting to realise tlio importance of tne industry growing up in <>ur midst. The whole outfit is being well formed, and the success of the venture now that the first season is so well advanced, scoins to he assured. The article turned out for sale is receiving first grade, and is in general demand. Export is taking place all along the Coast. Indeed more hotter is lieitig sold in other Coast ceiftres than in Hokitika, strange to say. The export overseas inis naturally been substantial. No doubt the local demand will increase as the position is lreltor understood, hut with the outside demand for winter supplies it is not unlikely that- the quantity available for local consumption will ho somewhat limited. The law of supply and demand, however, must lie satisfied, and the appreciation of the commodity by consumers generally is very satisfactory as indicating the good article produced.
