Butterscotch Biscuits,
PJaee one cup of butter where it mil soften but not melt. Add 2 cups brow* sugar, 2 well-beaten eggs, 3$ cups flour, sifted with, one teaspoon bicarbonate soda and 2 teaspoons cream of tartar, 1 teaspoon of salt and 1 tablespoon of vanilla. Mix together thoroughly, using the hands if necessary,-make into rolls of desired size, place on a tray and leave in ice-chest all night. In the morning cut off thin slices and bake on a, greased pan until a pale brownabout 6 minutes in a quick.oven. Cocoanut Cheese Cakes. Melt together 4 ozs butter and 8 ozs sugar,- boil for 2 minutes and t&en pour out to cool. Mix 4 ozs grated eocoami* with sugar and butter and add the grated rmd of a lemon, 4 beaten, eggs and a little milk. Line small patty tina with puff paste, fill with the mixture 'anxLbake in .a brisk oven. Dry Apples Now. Now is the time'to dry apples fo* the winter. Feel, core and slice the apples thinly as for a. pie, then dip t&e slices into a bowl of water in which a handful of salt has been dissolved. "Cover a large tray vpith a clean clotlt and spread the slices upon it. Put the tray in direct sunlight foT a few days, bringing it in each night. Turn apples occasionally so "they will dry through. When they are thoroughly dry put into a new calico bag'and hang in a dry place.
