The most minute precautions tire used in tlio .model dairy farms near the largo centres in Holland, ill order to produce' milk having the greatest degree of purity, it being designed specially for consumption 'as fresh' milk. Even the kind of food given to the cows, and its qualify, are looked after, as to avoid digestion troubles, which are known to affect the quality of milk. Before milking, the hind parts and udder are carefully washed with boiled water and boric acid, and then the animal is taken to the milking room, this place being washed and disinfected once a day. The milk is collected in special sterilised buckets. In these establishments the personnel undergoes a medical_ examination, to ensure their being quite healthy, and they are required to put on a special jacket 'before milking, and to wash their hands in sterilised water. In this way the milk is assumed to be as free from irerms as it is possible to have it.
