The Dairyman's Natural Euemy at Work.
« It is amazing that year after year meetings of loading ' dairymen' are held in New Zealand without a single word being said about the terrible evils of tlie margarine trade. Here is a spooi ni en from the London Grocer, showing how th« imitation butter is ousting the real article from tlie market. How is that onr dairymen cannot realise that this is a much more important matter to them than saviivg the millionth pa.rt of -ft penny on a pound of parchment pa,per ? Margarine.—- A 'phenomenal demand is experienced, duo in some measure to the shortness of butter, but largely to the excellent manner ill which the sale ie pushed by the individual grocer. It is noticeable that the trade is all in tlie better srades, are so very scarce and dear that not mu.*ii is obtainable of the lower sorts, and with tlie advances which are _ now taking place tlie basis of price, for the cheap rabds is 10s per cwt higlier than at this time last year.
