NATIONAL DAIRY SHOW.

The great Xational Dairy Show of 'tho Alaiiawatu Agricultural and Pastoral Assertion was opened at noon to-day, by .Mr Muick, M.P., in tho uiiavui:!ah!i: absence of tho Minister for Agriculture. The show is marked by many features of sueeiss, and in several divisions there seems to be certainty of new standards df excellence being set up. Mutter classes are exceedingly well filled at the show, there being 88 factories represented, by .SCO exhibits. A very lino display of fruit also is being made, the apple classes being especially prominent. The well-knrMvn Stumor Pippins were the most numerous class, but there were several newer kinds shewn. Chiof amongst these was Stalk's "King David," which the growei trot from the raisers in America. The raisers of this apple claim t; ■have ben exp 'ri"'en' ing with apijli growths for over 170 years, and the\ say that the "King Da', i !" varieh is the best sort, both as a keepo: j and a dessert, they have cot yet.

Cuddie, remarked that tho qiuiiity of tho hut-tor in Class 5 (factory butter lor export) taking it on the whole was found to be superior t<, that in the other classes, with the exception that is of the prize-win uiug butters. AVhen it is remembered that tho butter in the othei classes was specially made for Show purposes one would naturally expect it to bo of superior quality to that mado in bet everyday work ov factory, such as the butter in the classes represented. This may hi. accounted for by the fact that competition has become so keen among makers that a special effort is made to follow some new idea of their own to secure a superfine competition article. In -dicing this it would appeal as thoudi a wumber of makers had departed from the recognised principles of most approved methods o>i manufacture, and this has given unsatisfactory .results. This can bo the only explanation. 'Tt is gratifying to know that the system now recognised as the most desirable and which is no>w followed by the loading makers in every dav practice stands out- so conspicuously as productive of a choice export article.
