A Chapter ok Bush Life.—Fatal Accidekt at the Logan.—The Brisbane Courier learns from its correspondent that one of the most painful and shocking accidents, and which ended in death, occurred on the Logan. It appears that on Sunday 22nd inst., a party of sporting characters were trying the new racecourse at Dryman’a Hotel, and several races were run. These were “ wetted down,” and the weather being excessively hot, more and more “ moisture ” was made use of, until races for “ bottles were decided on. When a lot of men get “ top-heavy,” and on horseback, it is easily understood how they now and again find the ground in their mad gallopings ; whilst, on the contrary, it is just as mysterious that more deaths do not occur from these wild'sprees; but the Devil, it is said, always takes care of his own and danger is not generally apprehended. However, here goes a race —a mad race, all of a heap, some on the course, aud some amongst the trees. One man gallops after to look on; his horse stumbles somehow—it either catches a stick or a hole—and off the rider goes with the force that only a large gum tree or the earth can stop. It is a hundred to one if some bones are not broken, the head split, or something worse. It was only last year, in this neighborhood, that a wild man ran his horse bang across another with a woman on, and sei.t the woman neck and heels at least a dozen yards. One horse was killel, the other had to be killed, the man lam.-d, but the woman, luckily, was only more frightened than hurt. Such are some, of the wild antics attending races. Well, this accident occurred by the stumbling horse and the heavy'fall, severely fracturing the skull, and all the lot were drunk and scarcely knew what had happened, Aid was sent for from Brisbane, and Dr O’Doherty arrived on the scene, but only to proclaim his inability to do any good. The man died on the Weduesday, and whether the party were ever any soberer or not between the time of the accident and the death I do not know, but on .Thursday they were in such a helpless condition the magistrate found the whole lot totally unfit to give any evidence whatsoever, and had to postpone the inquest till the follwing day. Of course the verdict was accidental death. Andrew Ryan (for such was the young man’s name; was a tall, smart, and handsome-looking Irishman, about 24 years old, exceedingly well built, and altogether a man of mark amongst his mates.
How to Preserve Fruit.—At the meeting of Horticultural Society held on Wednesday evening, Mr Mortimore exhibited a tin of .preserved quince, the flavor of which was almost equal to that of the fresh fruit; The mode in which the fruit had been preserved was as follows:': —One poupd of sugar to ten pounds of fruit; the fruit to be cut up in the ordinary way for. making pies, or puddings • the fruit to be half cooked, and whilst, boiling hot to be poured into tins and soldered down. It was stated by several persons:, present at the meeting that apples; pears, and similar kinds of fruit could be ; preserved .in the same, thapner without in any wuy losing their*flavor.—Sydney Morning Herald. A Seiffker. —‘‘Biddy, did you put. an egg in the coffee to pettiest?”- “Yes, mum, I put in four; tfcpy was sqbad I had to use the more of them.” Biddy was clewed opt,
