DIFFERENT SANDWICH FILLINGS
FOR CHILDREN’S LUNCHES.
Sandwiches enter quite largely into the scheme of meal-planning—for picnics afternoon teas, and especially children’s lunches The kiddies get tired of the same old thing" every day, and mother welcomes anything that will be a change, and vet wholesome and appetising for young, growing bodies. Here are a few suggestions to fill the bill. These are especially spitable for kiddies’ lunches. Take a slice of white bread, thinly cut, and spread on it butter and marmalade. Place on this a slice of brown bread. Butter the latter, and put on it shavings of cheese. Over this press a piece of buttered raisin bread. Cut into three or four strips. The usual date sandwich is much improved if the dates are mashed with a little lemon juice. An interesting change for a filling is grated carrot, cold cooked beet and a dressing. Add finely chopped onion, and spread between sliced whole wheat bread. Cabbage, cut fine, with onion, or celery or onion, together with mayonnaise. make a good filling. Try almonds blanched in the oven, with small bits of apple and celery and a dressing. Between white bread slices, this filling is delicious. Peanut butter soon becomes tiresome if used alone, but if combined with lettuce, is nearly always enjoyed. Here is a great favourite with children: Freshly roasted peanuts, well chopped’ and mixed with apple and salad dressing. Spread between raisin bread. Any of these fillings have more food value than those obtained from cans. Just a little planning and foresight, but it makes lunches a joy to the child, and sandwiches not too hard a ask for the overworked mother.
