Hawke's Bay Times. Nullius addictus jurare in verba magistri. WEDNESDAY, JANUARY 24, 1872.
.In the Province of Otago there areat present three establishments for carrying on the meat-preserving industry. Only one of these, however, belong to a local
proprietary, and this we understand Las been induced to suspend its operations for some time past, oyying to the unfavorable aspect of the home market at the time of che close of the late Franco-German war. The more recent favorable news received from home of the change for the better that has taken place in the prospects of the trade has caused the company to announce that they will resume operations next month. The other two establishments are not connected with local enterprise, hut belong to a joint stock company, styled ."The New Zealand Meat-preserving Company," composed of capitalists residing in the west of Scotland. These gentlemen, it seems, have sufficient faith in the futuie of the trade in pre served meats to invest their capital in this venture at the antipodes of their home. Surely facts such as this ought to be sufficient to stimulate local enterprise to efforts in the same direction; and while we hear from both North and South, the cry that farming does not pay, and that it cannot be made to do so without Protective duties, it must be satisfactory to know that there is offered in meat preserving a great source of profit to who embarkin the speculation, and one from which the whole Colony most benefit largely. The stock of the Colony has rapidly increased of late years, and though we do not know that any district is at pre sent overstocked, such a result must have occurred but for some such opening as that now offered in the European markets for preserved meats.
We append extracts from two more of our English papers bearing od the subject. Land and Water says : ? There [the colonies] is food in abundance; here [Great Britain] are conBurners in thousands ; and the difficulty 8f bringing the tw o together i« being
rapidly solved." The Graphic says : "We are glad to hear again and again that the cooked meats now introduced are becoming daily more used
That the trade will grow is certain, for two reasons of importance : the taste is easily educated to like the food ; it irs economical, and young children trained to its use prefer it; and in hospitals, work-houses and prisons it is the basis of cheap and nutritious diet."
