Fry it, turn, fry the other side, tlien turn it on to a sugared paper, sprinkle sugar and lemon juice over it, roll up, and serve hot. Steaimed Batter Pudding Pour the batter into a greased basin, cover it, and steam 1-J to 2 hours. The batter may be enriched by using more egg and less milk; variety may be given by some additions. Fruit in Batter Drop some pieces of fruit, or Binall whole fruit into a prepared tin or piedish, pour the batter on it, and bake it. Sprinkle with sugar before serving. Black cap Pudding. Oue ounce cleaned currants placed in the bottom of the greased basin, pour the batter in and steam it. Eaisins, glace clxerries etc., may be used instead of currants. Fritters For coating make the batter using only half of the liquid. Dip some sliced apples,. bananas cut in half lengthways, or finger sandwiches of bread and jam f of an inch tliick, into the batter ; lift them out with a skewer and fry in hot fat until a golden brown, drain on paper and serve hot with sugar sprinkled over them.
