BARLEY CREAM SOUP Ingredients : 4 oz. barley, 1 quart of milk, 1 onion, 1 carrot, seasoning, 1 egg, 1 gill of cream. Method: Soak the barley in cold water overnight, then drain off the water and put the barley in a double saucepan with the milk, sliced onion and carrot, and seasoning to taste. Cook gently until the barley and vegetables are soi't, then rub through a sievo. Put back into the saucepan and bring to the boil. Beat up the yolk of the egg with the cream and slightly stir this in. Re-lieat, but do not let it boil. Turn into a hot tureen, sprinkle with parsley and sevvq with sippets of fried brcad.
