New Method Discovered in Germany The German PfeSs recently published particulars of an invention which, it -is claimed, will reroltttiOriiSe the dairying industry by enabling milk, cream and Other dairy products to be kept quite fresh for long periods by subjecting them to pressure under oxygen at a temperature of' 6 deg. centigrade. The invention is stated to be the result of years of experimenting by a Duisbery chemist named Hofius. It is claimed that he has perfect'ed 'a Special vat, knowii as the Hofiustank, which has been tested by order of the German and Prussian Minister ef the Intermr. It was found on testing that it Was poSsible to keep milk sweet and fresh for 60 days. Moreover, the process also invproved the taste of the milk, the so-talled stable aiid cdW flavoiu-s in the product being entirely eliminated after storage. In othef tests similar results were obtained in which buttermilk and cream were used, the treated cream being also found to be more easily "whipped," and the "whipped" cream itself being found td be superior to untreated "whipped" cream. Another important claim made On behalf of the process is that It reduCes storagq costs enormously. It ie further stated that a humbfer bf German dairies and milk depots havb already Signified their WiilingheSS to adopt the process, which is to be fdrth'er tested by fitting the Hofius tank in a ship of one 'of th© German lines operating between HambUrg ahd Gapetown. The complete voyage will last 50 days, and it is proPosed not to exhaust the supply of milk thus stored on the voyage, in order to test the residue when the ship returns to Germany. The liner Watussi, which reached Capetown recently, cOi-ried several of the Hofius tanks, whose contents were /ben still absolutely fresh. Already mquiries are reported to have been received from many countries regarding the invention. In the mbimtime patent rights have been taken out to protect the process itself, and not merely the tank. It is stated tliat the apparilttlS Will probahly- be introduced into Solith Africa shottly. Tefi yearg a^o fi bfother of the Inventor, Df Hofius, coinplai'ned that science had don© Vefy little towards sdlving the problem of keephig milk fresh, states an English journa], and this decided the inveiltor to study the subject. His invention is the product of ten years' assiduoud and carefnl experimenting.
