Potato Souffle Ingredients: 2 cupfuls of hot mashed potatoes_, 1 tablespoonful of butter, salt and pepper, grated cheese, 1 tablespoonful of minced pai'sley, 2 egg whites, milk, flnely chopped mint, Method: Flavour the potatoes with mint, very delicately. Stir in with a wooden spoon the pars\ey, salt, pepper uixd "butter. Beat in enough Tm'iv to make tho, mixture perfectly smooth, (lien add the stili'ly-beaten egg whites. Turn at once into a buttered souffle dish and bake for about 10 minutes, till puffed and hrown. Sprinkle with grated cheese and serve at once.
