The proof of the pudding ia in the eating, and the proof of the superior* ity of the Trocadero is found in the numerous custooiers who throng the tea rooms daily.* A proposal to construct underground conveniences near the present conveniences by the clock tower is being considered by the Hastings Borough Council, and last evening authority was given for the preparation of estimates. In the meantime a pipe has been let into the ground for seven or eight feet in order to gauge the depth of eub-soil water over a period at the site. Whey, onee a troublesome waste product of skim milk, is now being turned to profitable use in the making of lactic acid in America. In the past lactic acid has been made from molasses, corn starch and other fermentable sugar sourees, but the use of surplus milk for thiis purpose opens a new source of income for dairymen. Whey is a by-product of the manufacture of casein from skim milk. Lactic acid is used in the textile industry, in baking, in hardening pickles, soda fountain beverages, medicines, lacquers, and in the leather industry to neutralise lime used to remove hair from hides.
