Rice and Almond Mould. —Thoroughly wash six ounces of the best rice. Drain it, and put it into a very clean saucepan, with a quart of milk, three tablespoonfuls of sugar, two ounces of sweet almonds, and four bitter ones, which have been blanched and pounded to a smooth paste. Simmer the rice gently until it is quite tender. Beat it for two or three minutes with a wooden spoon, and then press it into a damp mould. Let it stand in a cool place for four or five hours. Turn it out carefully, and ornament it with bright-colored jam or jelly of any kind. Rhubarb Soup. —Take six sticks of fine young rhubarb. Peel them, and cut them into short lengths. Throw these into a quart of beef or veal stock, and add an onion, two thin slices of bread, and a little salt and pepper. Let the liquor boil, remove the scum as it rises, and simmer the soup slowly until the rhubarb is tender. Strain it and serve with toasted sippets. Radish Sauce. —Wash well, peel, and grate some radishes, and mix them with a little oil, vinegar, salt, and pepper. This sauce is a good accompaniment to cold meat.
