THE HOME.

Caramel Cream. —Boil one quart of rich new milk, and mixed in some caramel as below. Beat up three yolks and one whole egg together, and add to the milk. Pass the whole through a fine hair sieve, and putting it in a basin in a saucepan of boiling water, cook until it thickens. This cream is served in glasses like custard. For caramel take 4oz of sugar, and hold over a good fire in a spoonful of water until it becomes a rich golden brown. Stuffing for Hare or Turkey. —Take -Jib beef suet chopped very fine, some parsley, a little thyme, pepper, salt, and spices, the same quantity of crumbs of bread as of suet, an egg or two, and mix the whole with a little milk. It would not be amiss to put to it a very small piece of butter, and to pound the whole in a mortar for a short time. This stuffing may be used with baked pike, or with either roasted or boiled turkey, roasted here, &c.
