Steamed Bread. —Brown bread cooked in a steamer, and finished within twenty minutes of browning in a modern oven, is an improvement on the ordinary way of baking. Curried Eggs.—Cut a couple of onions in slices, and fry them to a light golden color in plenty of butter, add one tablespoonful of curry powder and a sprinkling of flour, moisten with a cupful of stock and simmer gently for ten minutes, then add six hard-boiled eggs cut in slices, simmer for a few minutes longer, and servo. Small Rice Cakes.— Melt 2oz of butter, mix with soz of crushed sugar, on which has been rubbed the rind of a lemon (essence of lemon will do, but is inferior) ; add the yolks of two eggs, then the whites of two eggs, heat to a froth, then the ground rice and flour. Fill the tins, which should he deep and well buttered, half full.
