Picklh pob Hahb.—Take 61b of common salt, lib of coarse sugar, 4oz of saltpetre, and two gallons of water. Boil these ingredients for half an hour, and skim the liquor well; let it stand till oold before putting the pickle into the tub. Place a weight on the meat, so as to keep it immersed. Turn the ham every day for a fortnight, and then have it smoked. This pickle will keep good for five or six months.
