Vbsbtabie Soup (Brunoise). —Tune equal parts of carrots, turnips, onions, and celery, out them all in the shape of very small dice, put a good piece of butter in a saucepan with a little pepper and salt, and a teaspoonful of powdered lump sugar; tosß the carrots in this till they begin to take color; then put in the celery, after a little time the onions, and then the turnips. When all the vegetables are equally oolored, add as muoh stook as you want soup, and set the saucepan by the side of the fire to simmer gently for a couple of hours, then skim and serve. A Good Pba Soup.—ln an artiole on "Summer Sonps," Mrs Beeoher gives the following as " a receipt for a most delicious pea soup :"—Put half a pound of butter into a soup kettle over the fire, and add to it a quart of green peas. Shake them round constantly for fifteen minutes to prevent their browning. Then take out half the peas, and set aside ; then pour in two quarts of vegetable stook, or some prefer boiling water. Out fine about a pint of spinach, half a dozen green onions, a little mint if agreeable, and a head of celery. Sot the kettle where this will stew slowly two honrs, till all the materials are reduced to a jelly, then add the pint of peas resorved, throe teaspoonfuls of sweet butter rolled in flour, two tablespoonsfuls of salt, and one of black papper. Let it just boil up, then pour into a hot soup tureen, and serve immediately.
