Sweet Applb Pudding. —One quart of milk, four eggs,'one lemon, all the juice and half the rind, three cups chopped apples, nutmeg and cinnamon flavoring, one-fourth teaspoonful of soda dissolved in a little vinegar. Flour enough for a stiff batter. Beat the yolks very lightly; add milk, seasoning, and flour; stir very hard five minutes and beat in the apples, whites of eggs, and soda. Bake in two square shallow pans one honr. Cover with paper when half done and eat hot with sweet sauce. Simple Scales. —ln households where there are no scales the following can be depended upon for all ordinary purposes :—One pint (heaped) holds 11b. flour, sugar, &o.; one ordinary breakfast cup and a half holds lib. dripping ; nine ordinary hen eggs weigh lib. ; one oup (well heaped) holds ilb. flour, sugar j four tablespoonfuls ilb. ; five hen eggs fib.; one tablespoonful 20z,; one dessert spoonful loz.; one proper sized hen egg 2oz. Cowhbbl. —Split tho cowheel, wash it, and place it in a stewpan, with just enough water to cover it. Simmer gently for three hours, chop enough parsley to fill a tablespoon, put it into the stewpan. Mix two tablespoonfnls' of baked flour, a teaspoonful of salt, a saltspoonful of pepper, and a teacupful of cold water; pour it in, and stir till it thickens. Boil for ten minutes longer; then serve. There are several other ways of cooking it, bat this is the most approved. The “ Mark Lane- Express' ” gives publicity to a statement to the effect that bran which has been saturated with a solution of alum and nitre, if scattered on each round of sheaves when ricks are being built, will keep rats and mice from the stack.
